I build each menu around the fire itself: whole joints hanging over embers, beasts roasting low and slow, cast-iron pans spitting with juices, and ingredients treated with the kind of respect you can only earn with smoke under your nails. Guests sit, eat, drink and watch the whole thing unfold inches from the action — every crackle, every flare, every moment of theatre.
